  5. 2015 Yun Honey High Mountain Spring Black Tea (Oxidization: 100%) (Detail)
The five tea samples, each in a 3" x 2" foil bag, weigh about 1 oz (28 gram) in total, or about 0.2 oz (5.6 gram) each bag. Specifically:
  • For compact and pelleted teas such as Alishan and Jin Xuan, there are about 2 teaspoons in each sample bag.
  • For less compact and twist-rolled teas such as Pouchong, Bai Hao, and Black tea, there are about 2-3 teaspoons in each sample bag.

Steeping instruction for each type of tea:

Generally, the higher the oxidized level, the lower the water temperature, so as not to overkill the water-soluble substances of tea, such as catechins (a type of antioxidant), and to prevent the taste from getting bitter.

  1. Wenshan Pouchong: 1 tea sample bag for 6 oz of FILTER hot water (180° - 190° F), 1st steeping (4 minutes), re-steeping 3 times
  2. Alishan: 1 tea sample bag for 6 oz of FILTERED hot water (180° - 190° F), 1st steeping (4 minutes), re-steeping 3 times
  3. Jin Xuan:1 tea sample bag for 6 oz of FILTERED hot water (180° - 190° F), 1st steeping (4 minutes), re-steeping 3 times
  4. Bai Hao: 1 tea sample bag 1.5 teaspoons of tea for 6 oz of FILTERED hot water (180° - 195° F), 1st steeping (4 minutes), re-steeping 3 times
  5. Honey Black: 1 tea sample bag for 6 oz of FILTERED hot water (180° - 195° F), 1st steeping (4 minutes), re-steeping 3 times.

Steep ware suggestion:

To let the whole leaves fully unfold and release flavor, please use a steep ware that offers ample room for tea expansion. It can be a pot steep ware, a cup steep ware, a bowl steep ware, or even a French press. The larger the capacity of a strainer or infuser, the better. Be sure to cover the cup or bowl to prevent the temperature from dropping too quickly and the tea aroma from dispersing into the air before the steeping is complete.
